Pitaya-Nana Ice Cream and Fig Brownie. Doesn’t it sounds and look delicious?! That hot pink is my weakness. No wonder my hair was that color for three years. I’m a sucker for bright colors and I can’t resist Pitaya Plus bright Hot Pink color!
Obsessed with that hot pink, and dealing with this hot heat I got an idea! A healthy colorful dessert to keep me cool and fresh during this summer (ahem) Spring in Miami. To balance the sweetness of the Nana Ice Cream I paired the dessert with a fig raw brownie. And it was as if the Pitaya (dragon fruit) and figs with chocolate where meant to be!
This dessert is totally raw, vegan, and gluten free. Feel free to replace the sweetener with the one of your choice but choose a liquid form like Coconut Nectar, Maple Syrup, Agave etc. For the ice cream, if you don’t have an ice cream machine, don’t worry! Simply freeze the dessert and then blend it in a high speed blender, or simply freeze, period. It won’t affect the flavor, just the texture. For the brownie I used a 4×5 pan to achieve a thicker brownie, but an 8×8 pan will work too.

Pitaya Nana Ice Cream with Raw Fig Brownie
Pitaya-Nana Ice Cream
- 3 Packs of Pitaya Plus
- 3 Bananas
- 3 Tbsp of Ground Chia Seeds
- 3 Tbsp of Natural Liquid Sweetener of Choice
- 1 Tbsp of Coconut Oil
- 2 Tsp of Vanilla Extract
- 1 1/2 C of Nut Milk
Blend all ingredients in high speed blender. Then transfer to ice cream machine if you have one, if not, freeze ice cream.
- 1 C of Figs (soaked for 30-60min)
- 1 C of Pecans (grind first, then add rest of ingredients to FP)
- 1/2 C of Cacao
- 1/2 C of Rolled Oats
- 1 Tsp of Vanilla or Chocolate Extract
Blend all ingredients in food processor, then place in mold and freeze!
