No-Flour Choco-Nut Cookies! Naturally gluten free. I was playing around with this recipe today. I made it twice changing the choice of nuts, using almonds instead of walnuts and trying out different cookie flavors; chocolate, and/or plain peanut butter. But who am I kidding, fudgy-chocolate and peanut butter is damn good combination!
No-Flour Peanut Butter Chocolate Cookies
- 2 Flax Eggs
- 1/2 C of Peanut Butter
- 1/4 C of Maple Syrup
- 1/4 C of Coconut Sugar
- 2 Tbsp of Walnut Oil
Mix all these ingredients with an electric mixer. Then add:
- 1 Tsp of Vanilla
- 1 Tsp of Baking Powder
- 1 Tsp of Baking Soda
- 1 Tsp of Sea Salt
- 1/3 C of Cacao Powder
- 1 C of Ground Walnuts or Almonds
- 1 C of Ground Pecans
Mix all ingredients together with a wooden spoon.
Scoop out dough in tray lined with parchment paper. Press down cookies with your hand to flatten them out once in tray. Place in oven for 10 minutes at 350′ F.
I paired my cookies with more peanut butter and locally grown bananas. Can you tell the difference? My bananas have seeds! And so should yours. Unfortunately, the bananas we get at the supermarket are hybrid fruits, which means they are very high in sugar.
