To choose what to make when one wants to eat raw takes its time. But preparing it takes way less than the thought of it. It’s great when I come home from work after cooking for straight five hours, it’s late and I’m hungry. Raw meals satisfy the tummy, are so simple, fast and practical to make and afterwards you don’t fill full or tired. You feel relaxed and calm.
Did you know that if you eat raw for 2 years or more you will be in permanent state of detoxification? There are so many great benefits to have a raw vegan diet. It’s simply nourishing our body with what nature gave us. With out modifying it, burning it, or killing it.
This plate consists of a bed of baby arugula, with squash noodles and a raw cauliflower cheese. I improvised this recipe by using what I had left in my fridge. And out of the need of doing something fast, light and of course delicious!
Note: When eating raw, food can be steamed, or cooked under 120′.
Raw Cauliflower Cheese
Ingredients for Cauliflower Cheese
– 1/2 Head of Cauliflower Steamed (I used orange cauliflower)
– 6-7 Parsley Stalks
– 1 Tbsp of Nutritional Yeast
– 1 Tbsp of Tahini
– 1 Tbsp of Miso
– 1/4 C of Rice Milk
– Sea Salt, Black Pepper, Paprika
– Onion Powder
– Steams cauliflower. When ready, blend all ingredients un a food processor.
– Serve on top of raw noodles.
