I don’t know why it is, that when I’m the most tired I come up with the best dishes. Now that I started working at Choices Cafe, my schedule is pretty intense –have in mind I have to look after my soon to be 10 month old baby girl, while also staying on top of household and life i.e clean the house, be a wife, a cook, a friend and a yogi. My conclusion, when I’m tired I want something fast. And that’s what I look to create with whatever I have available in my fridge.
This dish took me about 15 minutes. It might seem elaborate. It’s just a layer of my Black Bean Patty, Heirloom tomatoes, and Sauerkraut (Fermented Cabbage). You can call it a Vegan Double Royal! What gave this meal the final touch was the dressing. A spinach-miso sauce.
Creating dressings rocks. Because you can batch it, use what you need, and then save it in a mason jar in your fridge. Next thing you know, your fridge is filled with different dipping sauces and dressings that can make of your ordinary dish, a bomb!
Below, recipe for dressing.
Spinach Miso Dressing
– 1 Tbsp of Miso (Organic)
– 1/2 C of Cashews*
– 1/2 C of Coconut Water
– 1/2 Tsp of Agave
– 1/2 Tsp of Garlic Powder
– Sea Salt & Pepper
– 2 Handfuls of Steamed Spinach
– Steamed spinach, when done, throw all ingredients in a food processors. Mix till smooth.
– Serve, and keep rest in an air tight container in your fridge.
*Soak cashews in water with a shot of vinegar and lemon for 4 -8 hours before using. Rinse well before eating or cooking.
