Raw Berry Medley & Banana Ice Cream

Raw Ice Cream00I was blown away when I discovered I could make Raw Ice Cream. It’s one of those recipes that makes you wanna lick the spoon and blender an all. It’s super easy to make. The taste can easily overshadow any sugary dairy ice cream. It’s creamy, smooth. It’s heaven! Made with a base of cashews and coconut meat. Every week I try a new flavor. I’ve done vanilla, chocolate, and this time Berry Medley and Banana.
I used an Ice Cream Maker, but if you don’t have one you can skip that process and freeze ice cream after blending it. The Ice Cream Maker it’s what creates the texture, but this is not necessary to enjoy of your homemade Raw scoops of joy.

Raw Berry & Banana Ice Cream

Ingredients
Berry Medley
– 2 C of Coconut Meat (or 2 Can of Coconut Milk refrigerated for 3-4 hrs)*
– 1 C of Coconut Water
– 2 C of Cashews*
– 1/4 C of Agave
– 1/4 C of Coconut Oil
– 1 Tsp of Vanilla
– 1 C of Berries

Banana Ice Cream
– 2 C of Coconut Meat (or 2 Can of Coconut Milk refrigerated for 3-4 hrs)
– 1 C of Coconut Water
– 2 C of Cashews*
– 1/4 C of Agave
– 1/4 C of Coconut Oil
– 1/2 Tsp of Almond Extract
– 2 Bananas
– 1 Banana cut into pieces.

Directions
Berry Medley Ice Cream
– Place all ingredients in blender. Blend till smooth.
– When done place in Ice Cream Maker for 25 minutes, then freeze. Or skip this process and simply freeze.

Banana Ice Cream
– The bananas should be yellow with few spots on them. If they are too black we won’t be able to savor the banana flavor, they will just become a sweetener to the ice cream. Add the 2 bananas into your blender. Blend till smooth.
– Add the rest of ingredients except for the other banana. Blend till smooth.
– Place mix in Ice Cream Maker for 20 minutes. Then add banana pieces as your maker moves. Continue mixing for 5 more minutes. (Or skip step if you don’t have an ice cream machine and freeze after blending)
– Freeze.

*If using coconut milk cans (the ones found in the Asian section) place in fridge upside down in the coldest section for 2-3 hours. When time has passed, remove from fridge, flip (so you can read the can) and open it up. The meat will have separated from the water. That’s what you wanna use. Scoop it out and place in blender. You can use the water of 1 can for this recipe. Note: Get the regular kind coconut water, not the low-fat or reduced fat. You won’t be able to use them for this recipe if you do.

*All nuts, seeds, and grains must be presoaked before using. Cashews must be soaked before using for 4-8 hours.
