Raw Vanilla Ice Cream Chocolate Cake

Ice Cream Cake00I thought I was not gonna be able to enjoy of an ice cream ever again after I found out about “Carrageenan”. An emulsifier derived from an Algae that’s added to [mostly] all our Vegan Nut Milks, and Ice Creams, pudding or anything that looks creamy and white. Why don’t I like it? It can cause gastrointestinal problems, cancers, ulcers and digestive problems. Carrageenan is not a food, although it comes from an Algae, it’s harmful to our health and should be avoided at all costs. Specially because so-called “Healthy Alternative Brands” like to put carrageenan in everything, even the “Non-Toxic” Toothpaste! (It’s white and creamy!)

Another food to watch out for is Soy. It’s funny how Soy is directly related to Vegans, as if one can not do with out the other one. Well, I’m here to prove that myth wrong. Soy just as Wheat, Canola, and Corn are the most genetically modified crops in the US. That alone causes for many people to develop Soy sensitivities. Soy it’s also the hardest bean to digest, it’s really heavy on our stomachs. It should always be eaten [if eaten] sprouted and organic. It’s true that soy is one of the highest sources of plant protein, but it’s not the only one. Eat Soy on occasions, choose Edamame, Tempeh or any other fermented form of Soy and always organic. Soy is also high in Estrogen which is linked to cause Breast Cancer and other health problems. In men, soy can leave males sterile, and cause prostate problems. It also depletes your endocrine system slowing down your metabolism. Avoid at all costs processed soy products such as “Fake Cheese” or “Fake Meat”, Soy Milk or Ice Cream, Soy Protein or Soy Isolates.

Not gonna leave you with the soy [ehem] sour taste in your mouth. If I burst your bubble let me make you dream again about creamy, finger-licking, luscious Raw Vegan Ice Cream. Made out Coconut Meat and Cashews! Now put it on top of a decadent vegan chocolate cake! –Now we are talking!

Below, my recipe for a Vegan Ice Cream Cake. After you try this Ice Cream you will not remembered what any other Ice Cram tasted like and you will not missed it. Notes: Cashews or Coconut Meat can be replaces with frozen bananas.

Raw Vanilla Ice Cream Vegan Chocolate Cake

Ingredients
Chocolate Cake (Base)
 – 1 1/2 C Brown Rice Flour
– 1/3 C of Cacao Powder
– 1 Tsp of Baking Soda
– 1/2 Tsp of Salt
– 2/3 C of Agave
– 5 Tbsp of Apple Sauce
– 1 C of Coconut Milk
– 2 Tsp of Vanilla Extract
– 1 Tbsp of Apple Cider Vinegar

Vanilla Ice Cream
– 2 C of Coconut Meat*
– 2 C of Cashews
– 1 C of Coconut Water
– 1/4 C of Coconut Oil
– 1 C of Agave
– 2 Tbsp of Vanilla Extract

*You can also use canned coconut milk. Place 2 cans in your fridge upside down for a couple of hours. When ready to use, flip them, open them up ad scoop out the creamy meat from the can, leave water aside. The water of a can equals to 1 C, which you can also use in this recipe. If using canned coconut milk, you’ll use a total of 1 C and half = 2 C of Coconut Cream/Meat, 1 C of Coconut Water.

Directions
Chocolate Cake
– Set oven temperature to 350′.
– Take out 2 bog bowls. In one of them throw in the dry ingredients like, flour, cacao powder, baking soda, and salt. In the other bowl, mix liquid ingredients; the Agave, Apple Sauce, Coconut Milk, Vanilla and Vinegar.
– Whisk dry goods good enough so all powder ingredients are well incorporated. When done, use a sifter, or whisk dry goods as you pour them on top of the liquid ingredients.
– Now that you have all ingredients in one bowl. Mix well with spatula or wooden spoon.
– When ready, pour mixture in your mold. Use a 9″ or 12″. The bigger the better. The 9″ cuts it closely. You might end up with extra ice cream. But that’s ok. You can freeze it in another container and enjoy by itself.
– Place mold in oven for 20 minutes.
– When cake is ready let it cool down, keep it in the mold. If you have double chocolate cookies handy, crumble them and press them down the cake. Totally optional. If not, skip this step.
When cake cools down you can start making the ice cream.

Vanilla Ice Cream
– Throw all ingredients in blender. Blend at high speed.
– Try it! It taste so delicious! And you are done with the ice cream mix.
– Pour over the cake and refrigerate over night.

Remove ice cream cake from fridge 20 before enjoying.
