Curry Coconut Macaroons Vegan & Gluten Free! Curry + Coconut + Chocolate make a pretty amazing combo. I made curry macaroons, curry-chocolate flavor, dipped in chocolate and drizzled with chocolate. Amazing! I’ve played around with the recipe and oven times and now I have the perfect recipe to share with you. Best thing of it all, it doesn’t required any sophisticated or expensive ingredients.
Curry Coconut Macaroons
Ingredients & Directions
– 3 C of Shredded Coconut
– 1 C of Sucanat or Coconut Sugar (use the sugar of your choice but it must be dried granules or the recipe would need adjusting)
– 1 C of Gluten Free Oats
– 1/2 C of GF Oat Flour
– 2 Tsp of Salt
– 2 Tsp of Curry
– 1 Tbsp of Cacao (to make the curry-chocolate flavor only)
Mix all ingredients in a big bowl, then add:
– 5 Flax eggs
– 1/4 C of Coconut Oil
Mix all ingredients together, then scoop batter on lined oven tray.
Bake for 45 min at 300′ F.
