Our A.C was broken, it was a steamy sunny Sunday. We barely had any energy to leave the house after an intensive working week. We needed something to cheers us up or cool us down. My little bugger was running around the house, and every time I opened the fridge to pour myself some water, she would go bulls eye towards a big bag of figs I had in the lower compartment in the fridge’s door. Whether she was trying to tell me something or not, the idea came down to me like Newton’s apple.
Figs is what makes up for the bottom portion of this smoothie dessert savior of our Sunday. You can also use dates, the trick is to blend the figs or dates with a nut butter and you will have Vegan Caramel. Figs are a great way to sweeten desserts, they are high in fiber making a great food to loose weight. They are also rich in potassium. Potassium is necessary to regulate blood pressure and heart health.
I got my big bag of figs at Costco this time. If you have the patience, you can find a great selection of organic fruits and vegetables at Costco.
The top part of the smoothie is a blend of frozen cherries and a squirt of liquid this can be water, or nut milk or coconut milk. The liquid is added to help the blender move and cream the frozen fruit. I used cherries, but of course, you can replace with the frozen fruit of your liking.
Cherry Bomb Liquid Caramel Smoothie
– 2 C of Dried Figs
– 1/2 C of Rice Milk
– 1/2 of Sunflower Butter
– 1 Tbsp of Lucuma Powder
– Pinch of Salt
– 2 C of Frozen Cherries
– Squirt of Non Dairy Milk
– Blend bottom layer, pour in frosted glass.
– Blend top layer, pour in frosted glass with a spoon.
– Optional, you can rim the glass with chocolate sauce. To make the chocolate sauce simply combine with a spoon 4 Tbsp of Coconut Oil with 2 Tbsp of Cacao Powder.
