I took my dad to My Choices Cafe, the vegan restaurant where I work at. Mind you, my dad is Colombian, lives in Bogota, and he is not familiar with living foods, much less with cold raw soups. I ordered a Raw Avocado Soup, and a cold pizza to share with him. We sat down at the table, but my daughter needed me to walk her around, so I stood up for a second.
When I came back to the table, I only found the pizza. I went to the counter to ask for my soup, and to my surprise they told me, my dad had already eaten it. Ha! I ordered another one and didn’t discuss the subject much with him, till the silence got louder and he decided to speak. Wow, that soup was really good! What is it made of? Avocados I said. And it’s a raw no-cooking soup.
He was impressed, and didn’t complain about the food being all vegan, or cold. I did not have to force him or prove to him that the food was, in fact food! Vegan and Raw cuisine is just another type of cuisines as it is Mexican, or Chines, is flavorful, nutritious and heart filling. Ah, smirk on my face!
Since then, I’ve been making more raw soups and think of him every time I make this soup. We just went through avocado season, so I had extra avocados to play with, and decided to make my own Raw Avocado Soup [for him].

Avocados are a superfood! They are great for mommas and babies for its high content of foleic acid which helps develop the brain and its cognitive functions. It’s rich in Vitamin B,Β fiber and potassium. But for what they are best known for is their pure content of Omega3s also dubbed “healthy fats”. These fats make an avocado an anti-inflammatory fruit that also helps get rid of free radicals in the body. Last, you don’t need to buy an organic avocado, it’s been said avocados are one of the safest and less sprayed crops. Its thick skin protect the fruit from harmful herbicides or pesticides.

Raw Avocado Soup

  • Servings: 2

  • Difficulty: Easy

Ingredients
– 1/2 Big Avocado ir 1 Hass Avocado
– 1.5 C of Rice or Nut Milk
– 2 Tbsp of Miso or Tahini
– 1 Clove or Garlic
– 1/2 Juiced Lime
– 1 Tsp of Tamari Sauce
– Pinch of Sea Salt
– 1 Bunch of Rosemary or Basil, if using dry herbs 2 Tsp.

Directions
– Place all your ingredients in a blender.
– Blend till smooth!
Pair with garbanzo chips, or homemade pesto croutons!
